Ice Wine

Something we haven’t covered here, but can be a fun diversion from conventional winemaking, is producing ice wine – ice wine differs in several respects from other wines, but the main difference is that is created from grapes that have been frozen while still on the vine.

This freezes the water, but keeps the sugars intact, - resulting in a particularly sweet wine. Although most ice wines tend to be made on-site at wineries, it is possible to create your own.
